Not only concept art, creating textures with which you can paint your 3d models is also a great application for AI image generation, as well as adding surface detail like rust, scratches and weathering. It will help artists with the tedious part of content creation. Seriously, who really want's to spend more time than necessary with painting a dozen variations of some 3d-model of a trash-can or table?
