If I were in your place, I would at least wait this school year out to see if anything changes. It's too late now to start another degree anyway, right? Or at least really difficult to catch up a whole semester. But if it still seems hopeless by the end of the school year, meaning if artists' voices are still being ignored and the AI generators unethically continue without any consequences, then sadly yes, I would look into something else. As someone who tried to study graphic design I really hate to say this. Because my heart is telling you to keep going no matter what. But my mind knows that sadly the world doesn't work that way and that if there's little to no chance you can find sufficient work in this field, it's probably best to search for something else : ( Now that is what I would do. Talk about it with all your teachers, fellow classmates, anyone in the field really. It's always going to have to be your own decision, and in case of something being a dream, it is really really hard to make a decision. But talking to others helps at least a little bit. I wish you a lot of luck.
