Pretty much any of the skilled trades are automation/AI proof. This includes: plumber, electrician, carpenter, nurse, &c. As for connectionist AI, I was into that for a while back in the 1970s. I was in industry not a major research university. So, I worked on a variety of commercial projects for a living.
