What you said at 6:55 is exactly what the AI does when creating an image from the dataset that has been posted online. The art of AI comes from the programmer's mind who programed the algorithm which then results in the final product. If you are creating art on a digital pad that same pad has algorithms programmed for everything from how the brush stroke is processed to the colour wheel used etc. Its no more organic of art than AI art as its all highly processed.
