I think all of your problems raise from the singular fact that you, and many others, either consciously or subconsciously, believe in an inherent, magical quality within the human brain. A 'soul' if you will.
In fact, even though I disagree with your overall take, I still personally feel the same 'soullessness' in AI art as well. Hell, sometimes when I chat with an LLM I feel like it's taunting me by acting like a caricature of a human.
Nevertheless, whatever highly advanced processes go on in the human brain, we'll eventually recreate them in a digital setting, probably sooner than most of us think, because again, we're not that special so recreating ourselves shouldn't take much effort for the same reason.
And honestly, I think it's only then that we'll gain the cognitive capacity to fully appreciate what it means to be human.
