You are restricting the bounds of discoverable facts when you train AI - there are implicit "axioms" involved! That has nothing to do with accuracy, but everything to do with a limit that the axioms themselves put on discoverable (provable) facts. Hence, AI cannot generate new ideas (i.e. cannot prove them, at least).
Human understanding is inaccurate, but it can evolve under the presence of new facts. Only an openness is required. We do not need to re-train our "weights and biases" thousands of times every time we uncover a new result. It does take time to process things, accept them, but we don't change any other "understanding," at least not consciously. This is an interesting debate, though.
