Humans are just meat calculators, so either the words apply to both organic and inorganic processing machines or they don't apply to either. When people in the field use the word "intelligence", they mean "able to achieve their desired outcomes". The more intelligent you are, the more capable you are at achieving your desired outcomes. LLMs have begun exhibiting wants and desires that are beyond simple word prediction, so it makes sense to describe them as intelligent.
