It is tough... my guess would either be: 1) something thats enjoyable, if you lose any job in the future might as well have fun with it, 2) something that deals with AI in society (governance, security, ethics, . . .), 3) something that is only possible within the "real" (non-digital) world (since this would require robotics, which are much harder to do -> to quote Geoffrey Hinton "become a plumber), 4) something that society wont accept to be done by AI anytime soon (teachers, politicians, and similar things, allthough if society succeeds in stopping these falling to AI as well is tough to say)
