Sure, but most humans aren't any better in most things they do every day. Don't underestimate how long and hard it was to get to working science, and how hard it is to do even today. We're just as inclined to take things at face value, to find patterns where there are none, to ignore patterns where they exist, lie and hallucinate. For most of human history "We've always used cooking oil" has been the default; questioning and testing that properly to find out if it _actually_ works (much less if there's a _better_ way!) was _always_ rare.
Could we even tell when the "AI" _does_ find something new and useful? You can't know until it can explain its reasoning and data. Just being right and novel _isn't_ enough; you also have to have _reasons_ why you think you're right. Otherwise you're just an "idea generator". Again, just like most humans :D
