it's because AI are less artificial intelligences, and rather fancy database that spout an average result, based on tags.
it's not the product of a specific person experience (life, media consumed etc), but the average of anything on the internet.
having so much data is unironically making it less versatile because of this.
plus, like some peoples already said in comments, art is first and foremost communication.
it's not always explicit communications (like stories with an explicit stance in X or Y topic), but it convey something like emotions, events, aspirations, or aesthetic taste.
Ai can't do that, because it don't have it. "it's random bs go that hope it work", the tool.
