You can learn from copyrighted images sure, but human kearning is based on what we see, we get a sense of proportion, lighting, color balance etc. when we look at someone else's work, however, an AI model looks at the pixels and the tags associated with the image, if it got an image with the "mountain" tag it just reads all the pixel data and when you ask it to generate a mountain it just generates that pixel data on the average/most likely values, furthermore you can train a human artist on copyrighted images but the work they make is influenced by THEIR expirences, whereas an AI is influenced by EVERYONE'S expiriences, it effectively removes the actual creative part of making art.
