I think AI will struggle to replace veterinarians, pediatricians, babysitters and elderly carers for a longer while. Also musicians playing live might be irreplaceable, as well as cheap customer service workers, like waitresses, hotel workers, etc - they provide experience that will be difficult to imitate. On top of that there's a lot of complicated manual work, like construction, cleaning and agriculture labour, which won't be easily replaced for economic reasons. This really doesn't sound great, especially that the economy won't be able to exist in the current shape.
If we evolve into a sort of technocratic communism, then I guess the new jobs will involve socialising people and providing various forms of psychological support. If the system goes into more abusive mode, then becoming a cannon fodder might be the next big thing
