I think AI is great as a first draft broad-pass approach, you sort of need a human touch to connect and refine what the AI has done. I haven't seen an AI 3d model from reference photos or maintained a consistent character model.
It's sort of like a dish washing machine, it might do a lot of work but you sometimes need to get in there for a few more detailed clean-ups.
