Btw as someone who loves AI I really respect this video, I think it's a really fair analysis of things. I normally get annoyed when people say they hate AI, but you did an amazing job at explaining things.
Also I totally agree, human effort and deliberate design choices make art art. Text -> Image is a replacement for creativity and while I appreciate it's conveince I'm slowly starting to lothe it because it lacks substance not quite in the way you described but it lacks emotion and expression.
AI often feels flat, and there's really no way around that other than by adding human creative into the mix. It's like modern movies, companies have stripped them of anything that could possibly be construed as an opinion making them feel generic and bland.
I still think AI can be used as a powerful tool, especially in animation, I believe it could really quickly take us from storyboard to a finished product. But I never want to see AI replace the storyboard or storytelling process.
