I played around with AI when it was new (I like glitches so attempting to overload it with unrelated key words and see what happened was entertaining for a little while) and I don't think it's really much use from a disability stand point. It's not controllable enough to make what you're imagining and the sort of things you'd need to do to actually control its output (manipulating what the reference pool it's pulling from is) have all been deliberately locked away from use. It's also not responsive to the type of disability you have, since it's a one size fits all button click.
Personally I (mild cerebral palsy leading to my hands jittering especially when I'm trying to focus or doing the same action on repeat) would get a lot more out of lasso tools with less opaque settings and the ability to cache multiple copied objects at the same time than I would ever get out of AI (and for physical art tools like spirographs and compasses to allow for neat lines without worrying about my hand suddenly jolting midway through the action).
