The analogy I keep thinking of that I think more people would understand is this: Why don't we use AI to generate football matches? Never actually bother with getting humans on a field, just feed the teams stats into a computer and have the machine generate a video of what that game would look like.
People who are apologetic to AI visual art don't get the artistry of painting/drawing, so just replace that with an artistry they do get, such as competitive sports. Take human elements out of everything and see what isn't fun anymore.
