AI "Art" is not inevitable, it feels that way, it seems that way, but you make a great point with your NFT example, just because something is popular and said to be the future does not mean it is. I see so many artists every day, young artists, devastated by the idea of AI "Art" taking jobs that they have dreamed of their entire lives, and I want to reassure them that no computer could ever replace their passion and talent, we as a society may be stuck in this AI craze today, but that doesn't mean we'll be stuck there tomorrow, do not give up on your dreams because of a stupid machine.
