The difference to me is that newer artist tend to look at the art styles of other people and may incorporate aspects of those styles into their art, creating a new style. Ai just takes an artist art and just copies the style in order to create a piece of work.
There’s also the difference behind why those pieces of art were made. Dana Terrace most likely took inspiration from Gravity Falls when she created The Owl House. Shion Takeuchi also worked on Gravity Falls but created a show that’s so different but feels so familiar.
There’s nothing behind Ai art but a program made to create a picture.
