Absolutely agree with all you've said. Good boundaries don't mean not being generous with our time and talent, but it does mean being clear about what we are prepared to _give_.
And I think one of the most telling things you said is the comment that some people see artists as simply "expensive AI", as inputs or resources into their for-profit production.
Don't work with people who don't see you as a person, and don't take your interests at heart. Or rather, if you are working for a "user" be sure to negotiate exactly what you want in return for what you are prepared to give.
