As you nicely pointed out at the end of the day AI is mostly a copycat software, and while a selfcontained AI could be massive for a artist so they don't have to redraw every detail of their art, in the way corporations use it really just is theft.
I also feel it is degrading to the AI that has been used and improved in video games over decades, and the term AI is ultimately used to disguise copycat software as something else.
