The ethics is simple, you're not breaking copyright by training, just like you don't breach copyright by going to the museum or the gallery. Breach happens upon commercial redistribution of something too similar. And even there there is leeway for homages etc. Look up Richard Prince ie. or one of the other 1000 examples in art - pre-ai.
