In all fairness, "AI" (it is not intelligent, it is capable of mimicking intelligence and can only go so far before that illusion is shattered) is more than just a computer. Its an algorithm running on a computer, and that fundamental difference means that most of what Sir Roger Penrose is hypothesising here is founded upon a false premise. Now to be clear, I do not think of what we currently call AI as intelligent or conscious. I'm merely stating that it is not simply computing. The output is a result of input data following an algorithm that the CPU is computing. A very complex algorithm that is clearly doing more than we ever thought a computer would be able to do. That algorithm is extrapolating patterns out of data, and to a certain extent, that IS understanding.
