Humans rebel and:
1. stop publishing their knowledge, wisdom and intuitive insights in areas that can be scraped by AI so that AI can only be trained on old information
2. models of ethical human-centric AI evolves and people choose to support and only buy from organisations that operate on AI + human empowerment (the corporate social responsibility of the future)
3. in a world with 99% unemployment people turn to bartering and go back to a village scale community, they move away from the internet which has become the hacker/human impersonation wild west - they cannot afford the luxury items that most of those who created these AI models want them to buy. Demand falls through the floor the billionnaires have been 'hoist by their own petard'.
Catch 22. Business owners including AI billionnaires need people to still be making enough money to buy stuff. Unless governments work out how to create a base living wage for all, I can't see how this would work in the longer term.
