In a similar experiment ChatGPT returned the result in a couple of minutes and it was useless.
I gave Claude a really bad excel with a month's worth of blood glucose measurements, quite dense sampling throughout the day, 5-6 times of sampling. Notes about food intakes, times of food, insulin injections etc. etc. It figured it out, with just two lines of explanations.
It was able to analyse it, give me averages per time of day create charts, what food did what, etc etc.And it did it in two or three minutes max.
So I do not know what could possibly be that it took it so long in your case.
