I am glad the professor is offering to give practical feedback. You should take him up on that. Your weeks of hard work are not for nothing. They are learning and practicing. That is the point of his message. The real goal should not be grades but skill development. But I understand your disappointment that you will not have grades reflecting your work, and the grades won't be there to distinguish your work level from your peers. AI has become a huge problem across all levels of education. I know my son's college has been struggling with it too. Do they expell half the class for cheating? Do they just tell everyone to go ahead and use it? It gets hard. This is something our education systems (and employers) will have to figure out how to deal with. And we do risk losing out as people become less literate.
