Let your insurance company handle it. It is what you pay them for. It sounds like they are warning you of the worst case scenario.
But if you live paycheck to paycheck and have no significant assets it is doubtful that they would try to sue you. Even if the other party wants to sue you a lawyer likely won't take the case because they will see you have no assets so it wouldn't be worth the time/effort to sue you.
That said if they do sue you and win a large judgement you would just declare bankruptcy.
