Because AI now is based on simulating how neurons in your brain work. When you are born, you are dumb as a baby. You don't know anything for years. Your input (feelings, pain, sight, hearing, smell, etc...) is fed into your neurons as data. At first, it just some gibberish random patterns (neurons firing randomly based on input). But eventually, your brain recognizes patterns and it start to make sense of them.
AI now is pretty much the same. When they say models, they are talking about how they arrange this simulated neurons. This is why AI has to be trained too like a baby. And a human assistant will teach it with feedback.
So, it is not far-fetch that simulating the brain will eventually lead to consciousness. That eventually, the AI will recognize its own existence and start to think for itself.
