This is true, but we there's also the fact that not all of the demand for art is tied to artistry. Some people need a product that previously could only be produced by artists, but they wouldn't have cared about artists otherwise, and now they can get it from AI. They never cared about artists, and we shouldn't delude ourselves into thinking we can appeal to them on the basis of something they never cared about.
I think the photography analogy is very useful. People used to only get likeness from handcrafted images. Then came photography. Yes, there's still the argument that a well-done painting is better because the artistry elevates it beyond a simple copy of a snapshot of light. But not everyone who wanted an image cared about the artistry. Sometimes they just wanted that snapshot.
With AI you see that some people never cared much for some aspects of the art, they simply want an image. Before AI they had no choice, the artistry came bundled with the image because only artists could create images. But with AI they get the choice of getting the only thing they cared about, in a cheaper, unbundled package.
