It's because they only see it as a product. Anyone who's ever done something creative can tell you, the journey is its own reward. You always learn something, pick up new skills when you create an art piece.
People that claim that AI does it better don't care about the process, they want to get to the dedtinstion as fast as possible and without having to think about it.
