@harrisjm62 I will give my short answer, which is that yes, I think there is an innately human quality to art. Now I will ramble a little, feel free to reply with your own thoughts on what I have to say my friend.
You present your argument like we're meant to automatically connect the dots. So what if humans made AI? Even when you present it that way, it's still once detached from humanity. We don't actually have any exact control as to how an AI model might turn out, though. If you want to get specific, then it would be better to say that humans created the algorithm and architecture used to train an AI.
Photography of course is categorized differently than drawn artwork, which is usually the thing people look to mimic when it comes to AI. I personally think it has a lot more intentionality than AI art, but I also do agree that the idea that something has to be entirely created from scratch is a fallacy. 3D renders are considered art, even though the lighting is calculated entirely by your computer. Some cases, the wall is actually a texture that you got by photographing some plaster wall in real life that you thought would fit. Doesn't matter, still your art, even if you weren't the person to 'make' that wall.
All art is derivative, and so are AI generations. The derivation or originality is not the problem, it is really just the lack of the human element. No matter how good AI image generation gets, it will never be made by a human. It cannot have the same life experiences and emotions as a human. It cannot incidentally look at the way a pile of clothes form a silhouette in its room and get inspired to create something.
I'd like to point out intentionality, but I do think at some point AI art might work by mimicking the way humans construct anatomy and shapes on paper, which would be a form of intentionality I guess. This is why so many people fixate on the human part without too much elaboration. It is an innate quality to our art that we all find relatable. Even if you show someone an AI generated image they really like under the pretense that it's made by a person, and then reveal to them that it was made by an AI, they'll have a vastly different reaction.
A more universal version of this last example is how the failures and imperfections of AI 'artwork' are not endearing. When an artist has a stylized and formless way of drawing a hand, it's something that people like about that art, and often the way it's drawn is seen as reflecting fundamental knowledge of anatomy. AI art is critiqued for this, though, because you know there was no intentionality in the creation of this wacky looking hand. I used hands specifically as an example since as an artist, a lot of us have these shortcut/simplified methods of drawing hands, we don't always draw them in an anatomically perfect way.
