Because you're learning techniques which you will then use in your own original work. The AI is copying the work of other artists and using it to directly compete with those artists for future work, using derivatives of their own art against them. When it takes you hours upon hours to create an original piece of art, and someone can crap out dozens of images an hour using your work to copy from, it's diluting the value of your original work by plagiarizing your work.
