Pretty sure he's real. It seems to be based on actual interactions but clearly he's presenting it to tell a story, I'm not saying that means it's a sketch, we could do some interactions with the chatbot and put out an interesting video in this same way.
Jailbreak is like they have programmed the LLM to give limited responses, for various reasons such as safety, but it's possible currently to over-ride those limits in various ways.
There's loads of methods, a basic version is when people give the LLM a 'persona' (there's already a bunch of preset persona's and some of them he's using here)
If we tell an LLM like 'give me this answer' it will do it in a particular way, but if we go to it 'answer this question as if you are Einstein' it gives a different response, that's sort of the idea but there are a couple of approaches that are almost like a bit of a hack.
