If you're referring to AI as a whole as LLM, i feel like you missed the part where Geoffrey Hinton talks about how the AI model works. Cause from Hinton's explanation of how it works, it doesn't work the same as what you were referring to. Yours sound more like basic algorithm than AI, where it only detects pattern. Whereas AI detects pattern AND infer something about those pattern in relation to other data it has. LLM as you've explained it, doesn't seem to have Deep Learning capability.
