LLMs are just one variant of AI. Specifically they are large Artificial Neural Networks specialized on language processing with added loops, heuristics and constraints to make their output make a bit of sense. There are other variants of NN, and also Decision Trees, Fuzzy Logic etc. AI is a very wide field within heuristic algorithms. This stuff has been around for decades in research before someone stumbled on LLMs. The "I" in "AI" is definitely a misnomer and researchers knew that from the beginning, but it inspires PhD students to join the lab and donors to fund the lab.
