Our human way to role over the heel walking is uniquely human while the heel of animals is just another joint and they essentially walk on their toe joint, like the olympians who also don’t role over but use the bend of the prosthetic like a spring. The extra joint is essential for performance. These foot plates are just lazy. Try walking without your toes, you’ll move exactly as bad and unbalanced as the robots do. Why invest millions in a robot and not do it properly, adding another joint can’t be that hard mechanically and the robots are trained in a program anyway, where algorithms could learn to use the extra joint in a couple of seconds.
