Transformer models are capable of producing information that is not in their training data. As a simple example, there have been a few studies where researchers have reverse-engineered tiny models that do addition and proved that they do actually do the addition correctly even on pairs of numbers they had never seen. If they were databases that could only spit out what they were trained on, that would be impossible. What an LLM actually learns during training is an algorithm for producing text (one that no one understands), not a list of facts.
