I think another angle to go after, is while AI can achieve great results, it becomes a nightmare in more complex workflows such as animation or game assets that need layers and tweekable properties. When changes need to be made, having to rerender all possibilities and get consistency is nightmare because it's a destructive workflow.
Another key point is while AI CAN make great art, having fine control becomes cumbersome to a point the amount of prompt and handholding needed to get a very specific thing can result in more effort than doing it manually. It's like having the worlds greatest artist do your idea, but you want something extremely specific...it becomes a complicated game of telephone.
