I think the difference is in how the previous piece is used to create the new piece. If a person looks at a piece from a different person and get inspired they might notice lighting or colouring or shapes or themes and find them interesting and take it in a new direction and create a brand new piece, using their own emotions and feelings to create the new one. An AI just takes parts and mashes them together. Some people have found mashed up signatures in ai art, where the ai has cut up and spat out a section. A person goes inspiration+feelings=new creation, an AI goes view-->replicate. Art needs feeling in my opinion
