Let's be clear on one thing... graphic design (as a profession) wasn't destroyed by AI - it was already on it's last legs when clipart became a thing. The rot started the minute graphic designers became glorified mouse-clickers in the late 90s - I know, because I was there when it happened. I saw it go from something that actually required technical know-how and industrial skills that offered a decent smidgen of job security to something every rich, bored housewife with a copy of Photoshop could do.
Also... as somebody who got scammed into art school many, many moons ago and haven't stopped regretting it yet, I say... screw "art."
