So, not to say anything about people who use AI as a single one and done thing, there are genuine creators who use AI in such a unique way. One person that comes to mind that's gotten pretty popular is a guy named Neural Viz. They make this weird alternate universe where the generation of AI actually sells the look and vibe of the universe. Not to say that normal artists couldn't do the same, but the crappy generation of the AI gives it a different flavor, where the story is very much still made by a human and everything else is given great quality control. You should definitely check them out, they're what I'd consider the cream of the crop for AI 'art' content.
