The anti-AI professor's analogy is correct whereas the one you provided is faulty. Many students who rely on AI to write essays for them do not learn anything from them, they barely even proofread the AI-generated essay as per the example in your intro. And if they were to proofread, it's precisely to get rid of things that'd appear AI to spoof AI-detecting software the professor would be using, instead of actually learning anything of substance out of the material. Using an AI to write an essay requires near zero effort or input from the human. At least with using steroids, you'd still need to work out hard for those muscles to activate. If students do want a mentor to help with their work they can always ask a friend, a teacher, look up a book or search on Google. All that information would be far better and more accurate. It's just called doing research, which no one has had a problem with ever.
