Well, most artists use mimicking as a jumping point. They don't typically stick to that style the rest of their careers and lives. I've been told that there are rules to art that must be learned before you can go bend and break them to your will in the name of an art piece, and there is really no better way to learn than through the masters (not really, but it is one way). Anatomy, color theory, shapes and lines, etc. Art styles developed by humans are not complete replicas, rather, they are a mosaic, a combination.
AI art not only samples from existing art made from *human* hands (typically without permission from artists), it also replicates the style as perfectly as it could – not as jumping point, but purely for the sake of copying. The worst part, however, is monetization. AI artists earn money from stealing and copying, which by the way, is literally art theft. It's kind of like fancy tracing.
