Let's say you agree to score a movie for a fixed fee, and you do it with 100% AI "created" music, which you minimally manipulate so as to fit the movie. And, this "score" fails in the copyright process, or isn't copyrighted.

I assume the contractor can't legally refuse to pay the agreed amount, but that now anyone can legally use the music for any purpose (or even try to copyright it), with no obligation, no?
