I go to chico state right now and have had classes with the professor you mentioned at the start of the video, and the philosophy department has taken up a simple but effective approach to solving the AI problem, everything is done on paper. All notes, tests, assignments everything is done pen on paper. This solves the AI problem but causes issues for a lot of students such as myself who have our entire workflow digitized, but don't receive the disability carve outs that some students do. I don't know if there is a good solution, especially with the use of AI by professors and faculty. Chico State has gone full in on saying its a good thing but I'm not sure I agree, students in my classes can hardly read or speak at the level they should, and these AI tools just worsen the problem by giving them a way out without having to learn anything. I feel that the entire higher education system is about to change, for the better or worse, but it cannot continue as it has with these new tools being available.
