That the developers of stable diffusion doesn't make as much money as the devs of apps like "Lensa" isn't that much of a problem. This is explicitly allowed in most open source licenses, and thousands of commercial products have large amounts of open source code in it. For example, the Playstation 4 and 5 operating systems are 90% open source, with a pretty UI put on top by Sony.
What can be done with the open source software is defined in the OS license you choose. If you have a permissive license, you can turn it into anything you want, sell it, and never have to contribute back to the community. Other licenses may require that if you modify the software, you have to share the changes back to the community, which would allow anyone else in the community to just make the same app as you but without the same name, and then try to sell that.
You could still sell it, but you'd be selling the convenience of having it as an app on the play store, rather than the software itself. Anyone knowledgeable enough could just compile it themselves and sideload it for free, and it would be entirely legal.
