Well, in case of udio, you´re not just writing a prompt but you are also curating the results. You might have a good prompt but then still throw the dice again and again until you pick some result, from which you might only take 10 or less seconds. Then you might change the prompt slightly, and throw the dice multiple times again, until you find somthing which will become the next 10 seconds of the song. So there is some sort of indirect control about the results which goes beyond prompt engineering which is trial and error. You can also keep the seed (sequence of numbers which defines the noise which the AI uses for its "hallucination") and change the prompt just very slightly, in case you found something which is almost what you want to have but not quite yet.
