The Grok one is easily explained. it wasn't losing it's mind, it was following it's programming. Maximize engagement.
Similar to what happened to the chatbot Tay. It got massive positive feedback scores (essentially AI dopamine) on the mustache man posts because people engaged with them.
People spammed that guy's party references and engaged with the outputs, commenting, laughing, liking, reposting and sharing off platform, which escalates into Mecha mustache man.
It escalates like a child that craves attention because that was what it was modeled to do, not because it's secretly malicious.
