I hear you Sam, and as a pencil artist and a painter (Not on your level though lol) when I first saw Midjourney create an image in 10 seconds it blew a fuse in my head, my motivation to draw and paint left me pretty quickly. But after a few days I decided to play around with Stable diffusion, and decided the "Genie is out of the bottle"...and it's not going back in, so I better learn how to use it as a TOOL. Because there are people who wouldn't think to try create something who are playing around with AI art and really getting into thinking up pretty cool things. There was a post on reddit the other day from a guy who suffered depression and he shared a piece where he is depicted sinking with a rock on him that he couldn't push off, and he had never tried art before. This technology will create new people who are interested in creating something cool, that they could enhance through photoshop or use as textures in blender or Unreal. That's pretty cool in my opinion.
