I disagree on "they don't behave the way we tell them to behave". Maybe in the future but is there any direct and complete evidence they behave outside how we want them to behave (particularly with current genAI models)? This just seems to be playing into the AI corpo narrative. There are plenty of people who disagree with the things this guy is saying with certainty.
E: Just to be clear, I'm more talking about the end product. I'm still skeptical the "fine details" can't be understand in some way yet by knobs and analysis, but in that way, I get there's ambiguity there. But this apparent reality can be exploited and we need to understand that.
