I'm an amateur\hobbyist photographer and my immediate thoughts was that the difference between the two versions of the same video, reminded me of the difference between a RAW image & a JPG image. JPG discards data it deems unnecessary and replaces it with an average value. The purpose of this is to reduce the amount of space needed to store the image, so, I took think YouTube could be doing this, and when you think that people are uploading better quality videos now, the 'average cost to store' each one will be higher than, even a few, years ago. Supporting the data cost theory is how YouTube automatically plays in 240p on the desktop site, even with playback set to auto. The viewer has to switch to a higher quality setting for each video. Sorry for my essay, I thought it might be of interest.
